Millet is a small, round whole grain grown in India, Nigeria and other Asian and African countries. Considered an ancient grain, it is used for both human consumption, apart from livestock and bird feed. Like quinoa and other whole grains, millet lends itself well to breakfast porridge dishes, a replacement for rice alongside vegetable stir-fries and as a savoury pilaf. Also acts as a versatile bulking ingredient in soups, casseroles and vegetarian patties.
