Buckwheat is not related to wheat in any way and is the seed, which comes from the plant Fagopyrum esculentum and is gluten-free. The seeds are rich in protein and fibre, including a variety of antioxidants and other nutrients. Many people consider buckwheat a superfood. This grain-like seed has similar culinary applications to other pseudo cereals, notably amaranth and quinoa. It can be made into noodles, pancakes, porridge and a variety of baked goods.
